D.O. Jerez-Xéres-Sherry

This wine is the result of ageing pure very sweet fortified Pedro Ximénez raisins musts coming 100% from vineyards located in the towns of Montalbán, Montemayor and Puente Genil for an average of 20 years (or maybe even 25 years, the solera system hardly allows to be more precise). It was initially fortified up to 17,5% abv, but one of the effects of the crianza process in very sweet and dense wines is the gradual decrease of the alcohol content along the years.
P.X. Navazos Gran Solera comes from a Solera of 22 casks located in one of the finest bodegas at Jerez de la Frontera where it has been aged in a typical jerezano style, that is in casks filled only up to 5/6 of their capacity, and at a higher alcohol content than what is the general rule in Montilla, where there is a certain tradition of ageing PX at 15% abv or less and in casks filled up to the top. Its high sugar content of 425g per liter proves its purity, in the sense of not a single drop of dry wine (typically Oloroso) added in this case for possibly gaining complexity.
This noble P.X. had never been bottled before since the solera from where it comes was established in 2001 by further ageing PX that was already around 10 years old on average. Therefore its age is clearly more than 20 years old. In fact, this solera is identified as “Solera Pedro Ximénez NO” inside the bodega, meaning that it should NOT be touched for any of the regular bottlings of the house.
It is bottled only in special lots for a single market. Both releases made up to now are available in Australia.
