A single and exceptional cask of very old muscatel vinegar, one of the few that Páez Morilla cellars like treasures. Very special, from muscat grapes and several decades of aging as vinegar that are added to the almost twenty years of aging as wine, to reach around fifty years of total age. Only a third of its contents have been removed from the butt to obtain six hundred bottles, which are six hundred pieces of goldsmith’s work. The result of intelligence and know-how developed over generations in the Marco de Jerez, this is an unparalleled product, with a unique personality.
The enormous concentration of La Bota de Vinagre de Jerez Gran Reserva al Moscatel 126 “Bota NO” is partially softened–unlike what happened with the also very old vinegar that starred in edition 106–by a touch of sweetness, a product in part of the effect of that same concentration on the muscat grape base.
We had to wait many years to bottle one of these very old barrels of vinegar. As already happened with edition 106, releasing this very exclusive product (and high priced, although cheap for its quality) is only possible thanks to the interest of some of the most prestigious restaurants in Manhattan.
Vinegars like this are often used to give character to younger ones, but this one has been bottled as is, without watering it down at all. It is a spectacular vinegar, ideal for perfuming dishes with just a few drops. Normally a minimal amount will suffice (even with a dropper) as a dressing, and it is even advisable not to add it directly, but rather to prepare a vinaigrette first by mixing it with oil, salt and whatever else you may consider appropriate.
