Amontillado is the king of traditional Andalusian wines, especially when, as in this case, it shows itself with all the finesse and liveliness of youth (ca. 18 years of average age). Its origin is in the Altos de Moriles, first aged for 7/8 years as fino during the first stage of its life, to continue in oxidative aging during the rest of it.
This is the third magnum of amontillado in the series, with which we complete a journey through the fresh amontillados of the three great historical towns of traditional Andalusian wines: Jerez, Sanlúcar, Montilla. Our trip began in Sanlúcar de Barrameda with La Bota no. 69, continued through Jerez de la Frontera with La Bota no. 96 and we have just arrived in Montilla, the place where the word ‘amontillado’ belongs, with this delicious wine, La Bota de Amontillado 128 “Mágnum”, of which a few more than six hundred units have been released, exclusively in 1500ml bottles.
A journey that gives rise to the game of comparisons, always fascinating… and often misleading, because in a certain way it forces us to proclaim a “winner”, when there is really no need to do so. They are three enormous wines, and the one we now present stands out for the personality of the Pedro Ximénez grape grown in the albarizas of Córdoba and for its relatively low alcohol content. It was never fortified, which contributes to its freshness in the palate.
It is best enjoyed in a sufficiently large white wine glass towards at about 12/13º C, for which it should normally be served slightly below that. An excellent aperitif on its own, it can also star in some memorable harmonies, such as seafood with an intense iodized taste (oysters, red shrimps, barnacles, anemones…) or spicy asian food.
