New saca of the old vinegar (very old, in fact) that, in February 2022, was bottled with number 112 of the series. Both, this 127 and that 112, are younger brothers of the super-old vinegar 106 (La Bota de Vinagre de Jerez Gran Reserva 106 “Bota NO”) that we bottled in the summer of 2021 and the very old Moscatel vinegar that came out in 2024 numbered as 126. Younger… but still seriously matured: this 127, with an age of around three decades, adding the age of the wine of origin and the aging itself as vinegar, could more than easily display the Gran Reserva seal. We have preferred to label it simply as Reserve to mark distance from the venerable 106 and 126.

La Bota de Vinagre de Jerez Reserva 127 “Botas Punta” is made with wine that was almost 15 years old initially, to which must be added another fifteen years during which the alcohol has gradually become acetic. Its acetic content is above 10, only surpassed among the vinegars available on the market by its predecessor and older brother. Likewise, it maintains some degrees of alcohol. As in 2022, we have selected some casks “de punta” (located at the extreme of each batch of casks) from the oldest solera of the house. A little more than a hundred liters have been taken from each of them.

Compared to the seven or eight degrees of acetic that the oldest and noblest vinegars on the market usually have, here we are above ten. A real beast, an exceptional vinegar that we recommend stocking up for intensive use at home and to give as gifts to gourmet friends.
Vinegars like this are often used to give character to younger ones, but it has been bottled as is, without watering it down at all. Very dry, of course, as is typical of authentic Sherry vinegar from Palomino Fino grape wines. Ideal for perfuming dishes with just a few drops, normally a minimal amount will suffice as a dressing. Another interesting option could be to prepare a mixture of sherry in a small bottle (it can be very old, but also a young Amontillado, or even a Fino) and this vinegar; for example, 1/4 of the former and 3/4 of the latter. Or it can be used less sparingly: a marinade or escabeche prepared entirely with this vinegar will be an exceptional dish.
